Duties and Responsibilities

  • Oversee the preparation of all desserts/pastry required for all outlets, banqueting and specialty orders, ensuring consistency and quality of all food products and in line with established portion and presentation standards
  • Demonstrate creativity and continually research and test new and different recipes to ensure that guests have an exceptional dining experience
  • Participate in the purchase all food and food related products in adherence with budgeted food cost and ensuring minimum wastage
  • Ensure the hygiene and cleanliness standards are respected at all times.
  • Ensure that food stock levels are of sufficient quantity and quality in relevance to the hotel occupancy and function forecasts.
  • Lead, Coach and train the pastry team to deliver the best culinary experience to our guests
  • Prepare the timely mise en place as per set standards.
  • Ensure full compliance with sanitary and quality standards.
  • Any other cognate duties as delegated.

Profile

  • Relevant diploma/degree or professional certifications in pastry arts and hospitability (or equivalent).
  • At least 4-5 years work experience in a similar position, preferably in a 4 or 5 star Hotel.
  • Excellent knowledge of quality food operations.
  • Creative and Flexible with the ability to work under pressure.
  • Excellent aesthetic sense for food presentation
  • Eye for detail to achieve operational excellence
  • IT Literate with strong leadership skills.
  • Experience with high volume production
  • Ability to manage individual and team performance.
  • Excellent organizational and time management skills
  • Excellent communication skills both written and verbal.
